Banana & Strawberry Tart

I made a banana/strawberry tart this past weekend but wanted to pass it around for tasting before I posted the recipe.  The comments were positive.




Ingredients
  • 2 Bananas
  • 1 - 2 cups of strawberries
  • 1/4 tsp Nutmeg
  • 1/4 tsp Cinnamon
  • 1 tbl Butter
  • 1/4 - 1/2 cup of Brown sugar
  • 1 tsp of vanilla
  • 1/2 pint of Heavy cream
  • 1 tsp corn starch
  • 1 Pre-made graham cracker crust (lazy I know but I was in a hurry and it tasted good)
Preparation
  • Slice the bananas and strawberries
  • Make a roux (thickening mixture) with the corn starch and heavy cream - have ready by the stove
  • Melt the butter in a skillet on low heat, add the brown sugar, spices, and vanilla
  • Add the fruit and increase the heat
  • Toss or stir the mixture ensuring that everything cooking and coated in the sugar/spice mixture
  • Once the fruit begins to soften add the heavy cream/corn starch roux
  • Increase the heat, stir constantly while the mixture thickens
  • Pour the thickened mixture ito the pre-made pie crust and tin
  • Place in a 375 degree oven for 20 minutes
  • Remove and let cool, although I dug into it while it was still warm
A couple of notes of interest - bananas have a tendency to discolor but if I had time I would have covered the tart with a homemade whipped cream.  Perhaps slightly sweetened with confectioners sugar and flavored with vanilla.  Perhaps showing my age but serving the tart warm/hot in a shallow bow of cream would be another nice finish.
